What Is Mold-Free Coffee?

Mold-free coffee is coffee that is third-party lab-tested to ensure it meets strict standards for cleanliness, quality, and low levels of mycotoxins.

Why Mold Can Be Found in Coffee

Mold loves two things: heat and humidity.

  • The Risk: Lower-altitude farms (where most "cheap" supermarket coffee comes from) have higher moisture levels and warmer air, perfect for mold to thrive on the coffee cherry while it's still on the tree.

  • The Peacemaker Way: We source SCA 82+ specialty beans often grown at higher altitudes. The cooler, thinner air naturally discourages mold growth before we even touch the beans.

2. Processing: The Drying Game ☀️

 

Once the coffee is harvested, it has to be "processed" (removing the fruit from the bean).

  • The Risk: In "Dry Processing," cherries sit out in the sun to dry. If it rains or if the beans aren't turned constantly, moisture gets trapped. In "Wet Processing," if the fermentation tanks aren't scrubbed clean, mold spores from the last batch can contaminate the new one.
