What Is Mold-TESTED Coffee
“Mold-tested coffee” generally means that a specific coffee sample was analyzed for mold and/or yeast under a stated laboratory method and date. The result applies only to the identified sample or lot, and mold-and-yeast testing does not by itself establish that mycotoxins were tested.
Why Mold Can Be Found in Coffee
1. Sourcing: The Altitude Factor 🏔️
Mold loves two things: heat and humidity

The Risk: Lower-altitude farms (where most "cheap" supermarket coffee comes from) have higher moisture levels and warmer air, perfect for mold to thrive on the coffee cherry while it's still on the tree.

2. Processing: The Drying Game ☀️
Once the coffee is harvested, it has to be "processed" (removing the fruit from the bean).

The Risk: In "Dry Processing," cherries sit out in the sun to dry. If it rains or if the beans aren't turned constantly, moisture gets trapped. In "Wet Processing," if the fermentation tanks aren't scrubbed clean, mold spores from the previous batch can contaminate the next batch.

3. Storage: The Shipping Sweat 🚢
This is where most "clean" coffee goes bad.

Storage and transport can expose green coffee to moisture if conditions are poorly controlled. That is why handling practices and sample-specific testing records matter; a test result should not be generalized beyond the sample identified in the report.

Why It Matters

Bitter or burnt flavors can result from roast level, grind size, water temperature, extraction, or bean defects. Taste alone cannot determine whether mold or mycotoxins are present.

2. The Quality: The "Goldilocks" Standard ⚖️
In the coffee world, you get what you pay for. Commercial "off-the-shelf" coffee is often a mix of leftover beans (robusta) and low-grade arabica that didn't pass quality checks.

The January 2026 reports published by Peacemaker measured mold and yeast. Those reports did not list or test mycotoxins, so they cannot support a mycotoxin result.
